How many date changes before Approval or RFE?

Date change is not relevant. You many not have a single date change and you will get approved. On the other hand, you may have many updates, but no approval. Best thing is to keep checking for the processing time for your service center.

Timeline

this would not be prioity date but "touched date" meaning someone was working on the file

like said above some put the "touched date " in and  some don't / date entry is not always up to date/ the officer could be working today on you file as they started to check it and still have it on their desk and it would not necessarily get updated 

personally i never say any "touched dates"  and i think they are trying harder to do it now
