Since my NOA2 expires on June 20th, I'm wondering if I will need to send an email to the embassy. I'm assuming it will automatically be extended, but hopefully they will send a letter or something to indicate the new expiration date.

You don't need to email anyone, nor will they send you anything with a new expiration date. NOA2s expire all the time, simply because the time between approval and interview is often so long (especially for Montreal). I was freaking out about my own NOA2 expiring before my interview (which it did!), but it's truly a non-issue -- my interviewing officer didn't even mention it.

Same boat with you. Petitioned in December was supposed to travel on April, which got canceled. Now there is no news litteraly when the embassies will reopen. This has been the most stressful time in my life. It is draining.

Doesn't that depend on the embassy? I feel like it's at least worth contacting them in case they're a little more particular about it.

With literally everything that is reopening and Europe that is doing definitely well, I truly hope that this travel ban will be lifted as soon as possible and that Embassies will reopen by July. But then again, I don’t want to get my hopes up because at this point we don’t have any way to know. And I absolutely believe that it would be helpful for all those hundreds of thousands of people that have been waiting in the dark to at least know when their Consulate or Embassy is planning on resuming services, exactly as USCIS did.

I'm sure it does, but the poster who asked the question is in Canada, and will be dealing with the Montreal embassy. The topic of NOA2 expiration is examined extensively in the appropriate Regional forum, and that is the answer.

I was previously advised to email and request an extension but given the situation, I think it would be very obvious that people need extensions. 

Also, since they haven't even sent me Packet 3 yet, clearly I'll need more time.

You have to file within the timeframe of one year after the medical for it to be valid. Doesn't matter when your interview is.
