This One-Pan Tuna Casserole Is Just What You Need Right Now

I know many feel comfortable food is not a current event. Try this recipe and tell me it doesn't deal with your anxiety over the virus.

 

 

This comforting dish has everything: creamy white beans, grated cheese, and (obviously) a crunchy potato chip topping.

It wouldn't. Growing up poor meant a lot of tuna casserole and just tinned tuna in general... also beans. I would find this recipe particularly unpleasant to eat.

 

Lately due to lack of foodstuffs I've been making things like empanadas from scratch and chicken n' dumplings. There also isn't much rice at the store, but no one seems to know how to cook risotto which is perfect for me because I love the stuff.

Another amazing story of regional differences.  While Layla struggles to find flour, we have it here in 50-lb bags on pallets.  Rice?  Same thing.  Thousands of pounds available locally.  TP and hand sanitizer I think are still scarce, though I actually quit looking for the past month.  (We scored a 12-pack of TP on our vacation two weeks ago that will take us well into 2021, so now we can relax)

 

As for the recipe, I would try it, but it's behind a stupid paywall.  Amazes me that people are willing to pay for "news".

I managed to get the last few bags of flour a couple of weeks ago. I felt bad for taking it, but I knew I could make some pastry type food with it, since other options off the table. We are good on sanitizer, a bunch of local distilleries stepped up and now you can get vodka bottles filled with it. TP requires going two counties away and always on a Thursday. :p Heavy cream also became a problem, but our Amish friends have a steady supply for us (and eggs too). Chicken can still be hard to get, so whenever possible I'm grabbing big packets and just dividing into individual meals.

It might be good but I would have to find something to substitute for tuna as I am a vegetarian.  I've been vegetarian for many years but thinking about going vegan.  We will see.  My favorite food right now is from Chipotle.  I order vegetarian tacos and they are awesome.  Probably will order some this evening.

Just mashed chickpeas with lemon and Tahini for a meat substitute. Add flaked nori to bring the sea into the taste.

Why do you opt to fight several thousands of years of evolution to try and be a vegan?

Absolutely no problem here finding TP or almost anything.  Going out today to restock on flour. Can't decide on 25 or 50 lb bag.   Oh, and by the way, my sourdough starter is doing great.  Going to make another loaf today.

I am vegetarian because (besides that fact that I find meat to be gross) we do not have the right to eat animals.  We do not have the right to wear the fur of animals.  We do not have the right to experiment on animals.  We do not have the right to use animals for our entertainment (Sea World or circuses).

Thinking I had missed a section, I just re-read the TOS.  Nowhere does it take away anyone's right to eat animals.

There's a reason humans have been eating meat for more than 2.5 million years, and animal rights never played a part in that, I'm guessing.

I am not naïve enough to believe that I can ever change the minds of people like you.  All I can do is to do what I know is ethical.  And continue educating people that can be educated.  You do not NEED meat in your diet.  You just want it.  So you go do what you do and I'll go do what I do.

Can it not also be said that you do not need vegetables in your diet?  There are people who eat zero vegetables, and swear they are healthier for it.  Just as there are folks who eat nothing but vegetables, and swear they are healthier for it.

 

The only issue I am aware of that needs attention in a vegan diet is the vitamin B deficiencies that may arise.
