Looks like only the interview asks for NBI. But medical, interview and CFO need birth cert and CENOMAR.

No.   Only 1 for your fiancee, the children are too young to require an NBI.

Read documents checklist ... some things are age related.

I was saying the process is done for 3 people = 3 visa fees, 3 medical .. etc.

Yes, but I'm referring to having how many original documents vs copies. She ended up getting 3 original birth certificates for all three of them. Plus three CENOMAR and one nbi.

You have plenty.  As long as you always maintain an original of every document in your permanent file, going forward all you will ever need to provide is a copy

YMMV

3 birth certificates for each is fine, you will need copies of the BC in the states from time to time so good to have extras.

CFO will want a CENOMAR for the GCP seminar, if she completes CFO before the interview (highly suggested) CFO is happy to look at an original and keep a copy.  You have extra so no issue there.

Slow down and read the guide for each, there are links to each of the official websites as well within the guide-  embassy, medical and CFO
