I'm so confused, please help

They don't need it. You can give them your driver's license/state ID and your unrestricted social security card and that should be enough. Unless you need to be a US person in order to do the job. My job requires it and they haven't asked for my extension letter at all. 

My DL expires the same day my GC does so that doesn't help me

That may be the case. I'm in NC and I'm a scientist in the pharmaceutical industry? Who knows. I did have to do E-verify when I started here

Theyre not supposed to. Your status doesnt change. In fact unless you used your temporary green card in your passport they shouldn't reverify you.

If you came on a CR1/IR1 visa then the visa becomes a temporary I-551 for 1 year.  If you adjusted your status this doesnt apply to you so disregard. :)
