Is there any way that you can get to that interview? RE-scheduling it could be iffy, many people have thought that their interview was being re-scheduled until they received the denial letter for non attendance which then starts a whole new round of problems.

Personally, I would go to the interview even if it meant travelling back to the previous state. I would at that interview let them know that you are in the process of moving to another state and give them the new address to send the card to and complete the AR-11 and I-865 change of address while there and a case worker can actually update your file.

Yeap, go back to NY for your interview. If you try to change your interview to WI, it won't get done and then you'll be started on deportation orders.

Submitt the AR-11 *before* your interview though. You are require by law to submitt the AR-11 within 10 days of a move. And the I-865 for the spouse/sponsor is required within 30 days. You can take photocopies of them to your interview though to show them that you have complied with the law.
