The way I understand your case, is, you're only qualified for a K-1. You are asking if there are any other options or additional pathways/categories you may apply to. I think you are confused with the EO regarding exemptions for health professionals. These so called exemptions are applicable to those you have previously applied in the EB (EB-2 or EB-3) categories (and possibly the FB (F1-F4 categories). The EO is saying, their cases may proceed, and if granted, are exempted from the ban. So unless you have previously qualified for this categories, the K1 is your option for now, as, the EB and FB categories will take significantly longer. 

 

To take the USMLE (probably Step 2CS) in your case, there are non-immigrant visas that can be granted as "single-entry" visa for that.

I got in touch with Paris embassy today about my visa. My interviews was supposed to be on March 18th, cancelled and pushed back to May 20th. They are telling me that is it likely that my interview will be cancel again so it makes me wonder if K1s are really part of the exemptions of the EO. France will be out of stay at home mesures from May 11th so I wonder why my interview will be cancelled again apart from the fact that they consider K1 are included in the immigration ban and so are following measures and not issuing my visa.

Is it possible they would cancel it again because they’re simply not scheduling interviews yet? I think it might just be a case of everything opening gradually, at least I really hope so :(

Nothing is set in stone regarding this virus. Just because the opening date is May 11 right now, doesn't mean that'll be the case ones it gets closer to that date. They will likely keep it closed longer. The US embassy decides what the US embassy will do, France doesn't. And it has nothing to do with the EO.

That's what I am saying that the situation in France does not impact their decision but the situation will allows interviews to take place so if they are gonna cancel it still I just wonder what is the reasoning behind.

I have no idea! My interview was scheduled at the beginning of March just after they cancelled the one that was supposed to take place in March. So I will just wait and see!!

No that's not true, i have traveled twice to US with my B1/B2 visa while our petition as under process in USCIS they even did not ask me any questions about it. 

 

but for my own safety i carried both time with me my job contract and home contract just to show them in case they ask, to prove that i am not gonna stay in US i am here for holidays only and will return back as i have responsibilities there in back home.

To some extent I agree, but if a country is imposing social distancing orders and closing nonessential businesses, I would expect the consulate in that country to follow suit.  So yes, the consulate can make their own decision, more than likely their decision will follow the lead of the hosting country.

My situation is same, i will contact US embassy in Dubai on Sunday as its already weekend here, better you contact them back and attach your visa copy and repeat your question again so they can get back to you, this is the lady told me on phone that to get a precise information send your visa copy to support email along with question so they can respond you. i am waiting for weekend to be finish so i can contact them for it.
