I am trying to occupy my time and prepare myself before my fiance gets here ,so i would like to know If any of you have some good middle eastern reciepes to share with me? Please let me know. I want to suprise him and start learning how to cook these different kinds of foods for him before my honey gets here :yes: . Thanks in advance!

definitely look at the thread that is stickied on top. I HIGHLY recommend moody's recipe for Koshari. Seriously I think it turned out better than what I had in Egypt and that's saying a lot!!!! :thumbs:

Oh I think were gona have to get Moody to share that with us. My husband loves koshari :thumbs:

She hasn't been around much but here it is:

No koshari without the hot sauce:

>

>1 large can of whole peeled or crushed tomatoes

>2 Tablespoons hot chili paste (Mexican chipotle in adobo sauce) (or

more if

>you can take it)

>1/4 cup of oil

>8 cloves of garlic sliced (or more)

>3 Tablespoons vinegar

>1 Tablepoon of ground cumin

>Salt pepper to taste

>

>Fry the sliced garlic in oil until they start changing color.

>Add the can of tomatoes and the chili paste, salt and pepper.

>Bring to a gentle boil, turn the heat down to low.

>Add the cumin and the vinegar, leave it simmering for 15 minutes.

>Put it all in the blender to make a smooth mix.

>At this point you can still adjust the ingredients to suit your own

taste,

>in particular the garlic, chili and vinegar.

>

>

>No koshari without the garnish of crispy carmelized onions

>

>3 large onions sliced into rings.

>Put some oil in a large pan add one tablespoon of butter for added

taste.

>Sautee the onions rings until they turn deep deep brown (just short of

>charred).

>Make sure that the onion rings do not overlap each other so that they

can

>crisp nicely.

>If your pan is too small do it in batches.

>No part of the onions should be even lightly brown.

>Stir to keep them from burning.

>This may take 20 minutes or more.

>You must taste something that reminds you of candy rather than onions.

>Drain on a paper towel and keep others from taking samples.

>In my experience that is the one ingredient that runs out the first.

>It should be somewhat crispy not soggy and limp.

>2 cups basmati rice washed

>2 cups brown lentils washed

>1/2 cup vermicelli pasta

The only changes I made were to substitute French's Onions (the kind in the can) and instead of the chili paste I used a few drops of tabasco sauce.

I did need to take tums the next day but it was soooo worth it! :thumbs:

if you want to buy some cookbooks go for anything by claudia roden, joan nathan, and paula wolfert. great authors!

speaking of middle eastern recipes...

if there was a class in your city that offered to teach you about the history of middle eastern cuisine, learn to cook, and learn where to buy middle eastern ingredients, would you take it? its an idea i'm thinking of throwing together for extra work.

I would take that class if I had time, but unfortunatelly I have to work over 60 hours a week and that not including traveling from patient to patient, so I'm dead by the time I come home...

I wish I had at least 1 day off! Sorry for getting off topic!

Hi Cheryl! Yes, you def. have to make it for Medo. I made it (again) last night. Soooo good! If Medo is anything like my husband, go easy on the chipotle (or any other hot sauce) or even omit it all together.

I have "recipes" for many traditional Egyptian foods if anyone is interested.

I think its a great idea. I did take one class on Moroccan cooking, but it was a waste of money because she didn't know how to cook Moroccan food. she must have put together recipees from a cookbook and then used her skills as a chef to change it up- in no way was it moroccan, but it was moroccan with a twist I suppose. So an authentic class- sign me up!

Hows the Vegan taste to the Middles East??? I was surprised to see that up there :)

It's funny.. I was telling my husband that I was on line looking at egyptian recipes.. He told me do not worry and that He will teach me :blink: ..

BAaaaahahahahaa..

My last trip I learned the only thing he can cook is fried potatoes (homemade french fries) He said he will cook for me.. I was SOOOO hungry.. and he was in the kitchen... I was hearing pots banging.. chopping knifes.. I swear I waited for HOURS!! i finally go into the kitchen.. EVERYTHING was a mess.. a pile of half shaved carrots.. Potatoe peels EVERYWHERE.. and the only thing cooking was a pan filled with oil and cut up potatoes!!!!!! :blink::blink:

not the best response.. but I got Pissed.. I waited for SOO long.. starving.. and fried.. greasy food was the LAST thing i wanted.. he was like " But hayati.. this is the only thing I know how to cook!" :huh:
