Salutations,

Taking into consideration the current situation that regards the COVID 19,  I was wondering of we can still apply for the k1 Visa and if we have enough proofs. You see, my boyfriend was planning on coming this summer to gather more proofs for the Visa but it seems that it will likely be postponed. Our current folder consists of several proofs that seem lacking to me, several pictures (20 pictures, some with his mom, with my sister), 1 and a half year of conversations plus conversations with his mom,pictures of his mom and mine (they are actually bestfriend) the plan ticket that he booked for his next trip (March). 

Please can someone help me, I'm really lost.

You can still file without problems because they are still doing administrative tasks like processing. So go ahead and file

You don't need that much to file.....  check the guide:

In summary, it took 13 months for approval of the CR-1.  It took 44 months for approval of the I-751.  It took 4 months for approval of the N-400.   It took 172 days from N-400 application to Oath Ceremony.   It took 6 weeks for Passport, then 7 additional weeks for return of wife's Naturalization Certificate..

The application, I-129f, for the K1 Visa only requires evidence that you've met in person within the past 2 years. You could include copies of a plane ticket, boarding pass, stamped passport... whatever will show you met in person. You can gather more evidence later for the interview.  Good Luck!
