So I am just started filling out my spouse's 1485 packet and came across the information regarding the I944.  So the I864 is regarding MY ability to help support her, correct?  And the I944 is a newer form for this process and it will show her financial situation from back in Finland, correct?  I am a little overwhelmed to say the least....as this seems incredibly daunting.  Do we need to get her banking and tax forms from back in Finland?  Any advice would be appreciated.

The I-864 is completed by a sponsor.

The I-944 is completed by the applicant. It is with regards to their current circumstances, not what they were when they were abroad. They may or may not have changed since moving abroad.

They don't care about her foreign taxes. The questions are regard to US taxes.

Note that if she has not previously lived in the US, much of it will not apply. Much of the I-944 applies to people who have been in the US for at least a considerable time previously (work visas, student/exchange visas, etc.)...somebody who has only ever visited or never previously came to the US will likely not have things like a credit score, US tax returns, etc.

So she LITERALLY just moved here 3/8/2020 and then we got married a week after.  She has NEVER resided ANYWHERE but Finland and we are just in the beginning process of her getting a bank account started and things such as that.  We are still waiting on her SSN due to Covid.  I just kinda freaked out when I saw the form....so i might be safe when I say this form is geared more for individuals that are, lets say, renewing their green card vs someone who just came to the US???

The form is not used for anybody with an existing green card. But it is more applicable to those who have lived in the US at some point prior to filing for AOS. As I noted, there are people with work visas, student visas, etc. , where this form may make much more sense. There's also people who have overstayed and/or worked illegally, in which case those items may also apply.

In your case with a very recent move to the US, at least several items being requested just do not apply.
