Intent to marry letter

Timeline

Now that I mailed my I129f application, I am concerned about my intent to marry letter. I have 1 letter stating we intend to marry and me and the beneficiary signed the same letter at the bottom and date. Will this do? Or should I have had 2 separate letters one from me and a different from the beneficiary?

Depends on how you wrote the statement

Dear USCIS officer,
I am the Petitioner, Name Here.My alien fiance Beneficiary, Name here,and I respectfully submit this Letter of Intent to Marry as evidence and promise to marry each other in the US. We plan to marry each other within 90 days after arrival with a K1 visa.
 

this is exactly what I wrote but we both signed at the bottom and dated.

We did something similar, and were approved without any RFEs.  FWIW, we also updated the letter pre-interview.

Exactly what does this mean? Is it necessary to update it pre interview? And how and why do you need to ?

The "letter of intent" is a document that states from the two of you that you will marry within 90 days of arrival. With both signatures, it lets the Adjudicator of your case have one more piece of documentation that indicates that you both want to move forward with this. The entire process is propagated on the premise that you can prove that you have a bonafide relationship and that you are not trying to gain immigration illegally. So the "evidence" that is asked for throughout this process is there to support your case. The more substantial the evidence, the more likely you will be approved.
