Anybody know if they would let my fiance enter the US with the k1 visa

People are saying that they can't get married anywhere. Why on earth would you possibly still want them to travel there with a K1?

Also, there's a pandemic, there's pretty realistic chance that people on that flight will have the virus.

There's really several questions in there

  1. Can your fiance(e) get to a POE at all? (probably no unless your fiance(e) is coming by land from Canada or Mexico)
  2. If (s)he can get to a POE, will your fiance(e) be allowed to enter? (this is probably yes)
  3. Can you reasonably fulfill the conditions of the K-1 (aka actually getting married) within 90 days right now? (you'll have to check for availability of marriage licenses and civil weddings or officiants near you)
  4. Is it safe to travel right now even if it's possible? (that's something you and your fiance(e) will have to judge)

Border seems to be closed for non-essential travel. K1 isn't deemed essential.

You should probably try to find out if there's a way to get a marriage license before you try to bring her there. If you can't find one within 90 days, you're sort of screwed.

they let my fiance in with her k1 visa, we entered thru land from Mexico.

Each land port can vary: "The CBP Commissioner may determine that other forms of travel, such as travel in furtherance of economic stability or social order, constitute “essential travel” under this Notification. Further, the CBP Commissioner may, on an individualized basis and for humanitarian reasons or for other purposes in the national interest, permit the processing of travelers to the United States not engaged in “essential travel.”" https://www.federalregister.gov/documents/2020/03/24/2020-06217/notification-of-temporary-travel-restrictions-applicable-to-land-ports-of-entry-and-ferries-service

Flying to the US is more reliable.

Flying to the US is more reliable than land entry; link to land entry "rules": https://www.federalregister.gov/documents/2020/03/24/2020-06217/notification-of-temporary-travel-restrictions-applicable-to-land-ports-of-entry-and-ferries-service

At the time I posted that, the only successful reports I'd seen had been by land. However, that was almost two months ago.
