wow, This is a perfect example of a bunch of self appointed experts giving trash talk.

I refer to referenced websters #3 definition of engaged;  Greatly interested: committed.

There is a long time and usually much distance in the 8-10 months before getting either a CR1 or K1 visa

There is a reason a couple has 90 days to get married on a K1 visa

I have never read where an actual engagement (which has different meanings to each of us) is required for a K1 visa.

Why in the World someone would bring up the CR1 vs K1 debate for this couple at such a late date in the K1 process (interview in a month) is just degrading and just an opinion of people not in the OP shoes.

Maybe some of you need your spouse to be able to produce income the day they arrive but many of us don't care if they ever  work.

And by the way you don't need income to qualify as a petitioner for a K1  visa... you can  qualify with readily accessible assets of 3x the 125% of poverty income in your state. or less than 75k, or with a co-sponsor .

I have sent in my I129F, I did give my GF a ring 6 weeks ago but we called it a "Marking". It was more to show my serious intent and feelings.  It was viewed as an engagement by coworkers.   I have not officially proposed but of course we have made plans together.  What signifies  an engagement  is not a black and white thing on this planet.

To the original OP question. it sounds like there is no dispute on the validity of your relationship, thus the interview in a month or less and the history of your income sounds like it was interrupted by love.  Your income it is obviously zero and  do show the employment letter...and  you have a co sponsor

Thank you for understanding my entire point lol

My co-sponsor is well over the required income and has all of the required documentation. I'm just going to submit my offer of employment letter and last few years of my tax returns which will show sufficient income. My profession the past 3 tax years is the same as the one on my employment letter so that should also show my income will continue where it left off before I moved overseas for a year. I am also going to write a short letter for our CO briefly explaining that I was unemployed while out of the US and now back in the US and returning to the same field/salary. I'm sure my fiancé can explain all of that anyway though.
