I recently came back from Vietnam to visit my girlfriend who is now my fiance (reason for the trip). I intended to go back to Vietnam in June (with my family) to have a wedding and start the CR1 process. Now that I'm in the States the Corona-virus has made this plan almost impossible. This being impossible because my parents are scared. I could still go and have a wedding but i heard that that having your parents at the wedding is a huge deal for "proof/evidence" when tackling the interviews that go along with any visa route(K1 or CR1). Now I'm stuck. I know that the CR1 is a safer route but that means i would have to push the wedding back to when the corona-virus pandemic dies out (who knows when that'll be) which in return means a longer time to get things rolling.

For Vietnam I don't think that having your parents there is major deal.  In most counties it isn't an issue.  Plenty of people do just a court wedding.   What is important, at the petition stage, is that you have proof of the trip with passport stamps and boarding passes and a marriage certificate.  Photos are secondary evidence.  Affidavits are the worst evidence.  Add your spouse as a beneficiary to your life insurance, add them to you checking account, co-mingle finances as you can.

I think you're overthinking this. If you don't think it is likely you'll be able to go to Vietnam in the near future to get married, go with the K-1. If you do think it is possible, go for the CR1. Your parents' presence won't make a difference, especially due to COVID-19. Pretty easy to explain if you were asked why your family didn't attend your wedding.

I also have not come across Parents attendance being a big issue and anyway you have the perfect response.

“If you know the enemy and know yourself, you need not fear the result of a hundred battles. If you know yourself but not the enemy, for every victory gained you will also suffer a defeat. If you know neither the enemy nor yourself, you will succumb in every battle.”

We got married in Vietnam almost a year ago and started the process, just court wedding. We had our wedding party early this year while in NVC stage. I think some people can start the process with just the marriage certificate first. It is hard to front load though. Make sure you have a lot of evidence.

The answer will depend: If your parent is Vietnamese-American, then the CO will expected they at the wedding. Again, this is a norm because of the culture, so it possible not applied to another countries. However, consider your parent ages and COVID-19, you have a valid reason to explain.
