I have my interview for AOS next week in Seattle for my K-1 visa that I entered on. I’m just wondering if they will keep my Canadian passport until my green card is issued as I’d like to travel two days after my interview within the US but I’m nervous to book anything if they keep my passport and I won’t be able to fly.

No they won't keep your passport.  But you should wait for the green card before travelling.

I should wait even if I’m travelling within the US? I was under the impression that I could always travelling within the US after entry and that I just wasn’t allowed to leave the country.
