I don’t know how responsive Nepal is but maybe if you contact them now and ask them to schedule the case for after your conference it will be the easiest way.

Our case is still at NVC I assume since we only submitted our docs a week ago..... can I contact embassy  now even when the case hasn’t reached?

I would also document very well the evidence that you're attending a conference,  possibly with a letter from the organization explaining your need to travel. Worse case scenario: you could be denied entry on a tourist, non-dual intent visa because they know you intend to immigrate.

Can't  you just bring your mom along and enter with immigrant visa, if it has already been granted?

Not before you have the interview date. Once you get the interview letter from NVC that show’s the interview date, email usembassy ktm directly requesting the rescheduling.

i did that for my wife 2 year ago.

timeline:

NVC interview letter: March 2nd week

interview scheduled: May 1st week

March 3rd week: Emailed consktm@state.gov for rescheduling to June last week

March last week: Embassy emailed me back saying to contact then in a few weeks (i guess they didn’t wanna deal with confirming interview 2 months ahead)

April last week: followed up with the reschedule request

April last week: embassy emailed me saying the interview rescheduled for June mid week

My wife printed the initial NVC interview letter and rescheduling email from the embassy to bring to the interview.
