To “front-load” your USCIS petition by including a lot of communication documents, photos, letters, and other proof of relationship items can only help. It will take a bit more time upfront for you to put together your packet, but it will pay off greatly by reducing your chances of being placed on administrative processing.

I’m going to frontload with quality evidence and hope for the best. We don’t have the normal stuff like letters and gifts, but I’m established here, we’ve been living together and have a lease and several trips to other countries together. I think this puts us in a different league than a lot of applications so hopefully it will go well.

I think three of the most important questions are: (a) are you Cambodian-American and (b) are you going to be present at the beneficiary's interview?  If the answer to a is No and the answer to B is yes and you have been living together in Cambodia for a year then you shouldn't have much trouble.

This is nothing more than conspiracy theories.  Almost every South African, Caribbean, South American, Central American and most Asian countries fit 'dirt poor' as you seem to describe.

I lived in Cambodia 5 years, 4.5 of them with my now wife. Those trips are a great piece of evidence, and you living there I believe helps your case. 
 

I moved back to USA first but returned to Cambodia for the interview, make sure you are there!
