We have not filed yet, but are planning to do so in the next 2 weeks. We are filing for AOS and AP concurrently. 
I am USC, and she has to return to her country for 4 months to finish her final semester of university, I will be going with her.
We are worried that her interview will be scheduled during the months we are out of the US. Is there a chance that USCIS will do that despite our AP travel dates being disclosed? 
 

if they do that, can we reschedule for when we are back in the states, even if that means postponing the interview for weeks or months?

I'm not quite sure if 4 months of absence reason with the officers for adjustment of status which is intended to be done from within the country. Have you considered going the CR1/IR1 route which allows your wife to finish everything in her home country? Also keep in mind that AP can take 6/7 months and I don't think a planned return qualifies for emergency AP.
