You haven't filled in your timeline, so I can't look it up for you.  Processing times for the I-485 by local field office are available on the USCIS.gov website, so have a look there.

 

For example, here in Seattle, we had to wait 15 months for my husband's interview.  Some offices are much faster than that, and some are even slower.

 

EAD/AP is processed separately (but filed concurrently) and is currently officially taking 5-7 months.

 

PS I ❤️ the name Julian.  Chose it for my firstborn.

We haven't even decided we want to do this right now yet. So once she gets the EAD/AP, she can like any other citizen or permanent resident correct?

The EAD enables her to work and the AP enables her to be paroled back into the US if she leaves.

If you're a US citizen, it's never too late.  She could overstay, and you could still file to adjust her status as your wife.

Her status has already ended if she has stopped going to school.  She has a grace period to leave. 

You're better off marrying and filing for AOS sooner rather than later.
