It really depends on the country and consulate..some let you attend, some don’t

Genrally speaking, they’re not going to let you in the consulate without an appointment.. have her contact them and request that you be added to hers at the very least..

You'd have to message the embassy in advance in London. See below:

Please provide the date of the appointment and the name of your U.S. citizen spouse or fiance(e) and arrangements will be made for them to be admitted to the Embassy.  They will be required to bring with them photo-id for presentation to Embassy personnel.  Children not applying for visas may accompany you also. If 12 or over, we will require their name and they will require photo-id. Please provide the required information through our contact form.

When completing the form,  please include your case number (e.g. LND2013XXXXXX). Failure to do so will delay our response.

Before you ask...they don’t usually reply to that request or send some kind of entry pass, but your name will be added to the list outside. Bring your US passport for ID.

When attending, would I (the petitioner) be required to answer any questions on behalf of my spouse? Would it affect her negatively if I do or do not answer questions for her?

Your attendance doesn’t help or hinder her interview really. It’s HER interview and it’s just a quick friendly chat. The officer might include you in the conversation to be polite...”Where will you guys be living? Oh my grandmother lives there” Or the officer may not be such a chatty one and may ask basic things like “How did you meet?” “When are you moving?” without adding personal comments.
