Since we got our visa approved, we are looking to book his flight. March is super expensive from London to Chicago for spring break so I want to give my fiance my miles and he will pay me back. do they care if he comes over on my miles? do they ask who "purchased" the flight?

They can ask whatever they want but I don't think this will be a problem because you will be marring this person, right? So, don't overthink!

also not a great look if that info came out on AOS. They want you to join bank accounts, medical costs, insurance etc as evidence of  legit marriage

If they ask the best answer would be “I was planning to come here next month but my fiancé surprised me and bought me the ticket for today, ohhh i love her so much” 😀

Keep it simple.  THEY DO NOT ASK ABOUT TICKETS when you arrive on a K1 visa. Full stop. The ticket is of no concern. There is no “if they do” in this scenario.
