Will it affect my interview if he is unemployed as of the moment? 😞

Since there are no interview possibilities at the moment, it will have no effect right now.

Your have time to see what the future holds between today and when life resumes some form of normalcy.

YMMV

Just today. He worked in is company for 12yrs already. Since his pay is high, his employer said they have to lay off people with high pay rate and told them to file unemployment.

It won't impact the interview itself, but it can impact the result of the visa being issued.

If he is unemployed at the time of your interview, then it may be an issue. He would not be able to provide a satisfactory I-134 in that case (Manila generally does not consider assets for an I-134, either).

If he finds new employment by the time of the interview, then that would be favorable.

A close family member may be accepted as a co sponsor at Manila.

There's not too much of a clear answer because a lot of it depends on what happens in the future. How long will it be until the consulates resume visa services? How long will it take to reschedule the interview? Does he get a new job by then?

I suspect that during this period of the pandemic I would hope that the embassies realize the "real world" impact that this virus has had on peoples lives. Hard not to but who knows. We have no idea how this will affect your visa processing as it's still too early to ascertain. These are questions that will have answers to closer to the reopening of the embassies. Let's wait to find out once the embassies open and more directives are issued. Patience is needed now.

Let me have a better understanding. The embassy rescheduled your interview or you saw May dates open in ustraveldocs?

My case is officially in transit now. It says my interview date was provided by the NVC. Where do I see that? In an email or a letter in the mail? I know with Covid 19 everything is delayed, just want to make sure I don't miss anything.

Do you have a copy of the PDF from the first page. If not get a copy and read #8 for your answer.

Per @Greenbaum's excellent tutorial, this part applies to K-1 visas.  NVC does not schedule K-1 interviews.
