In the intent to marry letter ,both of us has to do one(so in total 2 of them) ? or only the beneficiary has to only ?

and can someone show me a sample of it for 2020 ,just to be sure i am doing write .

and do i have to mail it the original one just to be safe or the copy is fine ?

Both ways are good.... But to avoid letters been sent back and forth for signatures.... You can both write separately and sign them... Goodluck

All evidence submitted to the uscis can be legible photocopies unless an original is specifically requested

YMMV
