Also I had an SSN from a previous work visa, but I choose to get a new number, I fear that my old one from work visa might be stolen.

They won't give you a new one because you fear it was stolen, you need to provide actual evidence of the criteria they listed.

An SSN is issued for life. They do not issue a new one without very specific causes.

Use the one you already have.

Agreed - they should issue the same one.

If they didn't for some reason, you would need to go to the SSA anyway to have them resolve it so you only have one. They would need to transfer any work credits on one to the other anyway.

Ive never shown my ssn card to any employer,  when filling out the i9 I show my passport which is a list A document,  and since the passport with i551 stamp is also considered a list A document the ss card not required.  The problem will be not having an actual number

If you have a new SSN, it might be a problem with some background checks and then you'll have to provide the physical social security card in order to prove that your SSN belongs to you.

You will likely receive a duplicate SS card a week or two after POE, with the same SSN as you had before on a work visa, provided that your name and date of birth are the same.  SSNs are issued for life.  A few years ago, when I tried to file my income tax return with the IRS, they said I could not file electronically because I had already filed.  Turns out it was identity theft and someone had filed with my SSN from a big data breech from Blue Cross/Blue Shield.  It was a big hassle and I tried to get a new SSN but it was refused, they said their policy was no new SSNs, even in cases of identity theft.  Now I have to file my tax return with a special PIN every year.  Your green card will likely arrive three months after POE, but in the meantime you can try to use the passport with the visa endorsement stamp as equivalent to a green card.  Some employers, DMV, banks, etc. may ask for the green card, so you have to educate them that the endorsed visa in the passport "serves as an I-551 for one year."  Good luck with your adjustment to life in the USA.

Thanks alot this is very informative. 3 months is a long time to wait. But I hope it goes by fast and that I can secure work with stamp.
