Me: Irish/ Swiss citizen, and now naturalised US citizen. Husband: USC; twin babies born Feb 08 in Ireland and a daughter in Feb 2010 in Arkansas who are all joint Irish/ USC. Did DCF (IR1) in 6 weeks via the Dublin, Ireland embassy and now living in Arkansas.

You won't need tax documents until the embassy/consulate stage.

 

Since you're not planning on filing for 3 months, it's safe to say your case will not be at that stage until after April 15, 2020 (heck, that would pretty safe to say if you filed today, or even last month). So you will need 2019 tax year documents (i.e. the ones you file this year).

Im very confused on what years i need to show.

A lawyer told me i needed one year. Even a lawyer can be wrong. 

My bad, I quoted you the i864 required.   When in doubt default to the form instructions or specific instructions from your consulate,  if any
