This is one of the questions I have been trying to find an answer for almost three months now.

is an F1 Student who has valid I-20 and F1 visa has "must" keep his status while applying for adjustment of status due to the marriage to a USA citizen?

In other word, does the student needs to keep going to school while applying or not?

To maintain status, yes.

To maintain a lawful presence, no. Once a proper I-485 is filed, he has a period of authorized stay from that. Authorized stay is not a status, but it basically means he can remain in the US while his case is pending.

9/5/18: Interview scheduled notice, 10/17/18: Interview

10/24/18: Green card produced notice, 10/25/18: Formal approval, 10/31/18: Green card received

5/1/2017: Case received by Manila (1 week embassy transfer??? Lucky~)

7/13/2017: Interview: APPROVED!!!

7/19/2017: Visa in hand

8/15/2017: POE
