reading this quote on the vn embassy website has me a little worried :

"The officer will make the decision whether a joint sponsor is accepted at the interview."

has anyone here experienced or heard of a joint sponsor for k1 not being accepted? to be more clear the joint sponsor 100% qualifies but for some reason the consulate doesn't accept it.

This is most likely referring to your I-129F supporting documentation.  You should read the I-129F instructions and get what they require as evidence of income and resources.

 

Example part 3 question 3 asks about values for property/savings/income etc.  You should have the proper documentation for you AND your co-sponsor.  Signed letters from a bank officer, a statement from your stock/bond account etc.

 

If you say your have $100k in stocks, you should have a statement listing that. You know, proof of what you are saying you and your co-sponsor is claiming.
