I filed in August of 2019 and got my NOA1 not too long after that. I frequently check the uscis website for any updates. My current status states that my petition was accepted and is currently under review but I notice that they have the date of November 4 2019 written above that. That date has been stuck like that for a few months now and here it is January of 2020. What's going on and why is that old date still written above my current status?

I believe you're referring to updates. Your original submission date is still your submission date, but they may have "touched" it this month. No use speculating what that could be. You will have to wait and see for more information or updates.
