as far as photos, sending about 20 photos should be more than enough

1 Photo is proof you met but Its not even PRIMARY evidence.  But secondary.

BEST EVIDENCE is an ENTRY VISA and plane tickets.  Now we're talking proof.

the family's blessings are meaningless.

Chat transcripts are meaningless on the I-125F

I have a certificate of residence, 1 year visa(with entry/exit stamps showing a long presence here), work permit, driver’s license, receipts and certificate from a language school I attended, a couple’s gym membership, lots of photos of us in Cambodia and abroad, and receipts from our trips(tickets, accommodations, visa stamps, etc.).

I would suggest that your work permit and your driver's license and your lease (if your partner isn't on it) are unnecessary. They will know from your one year visa and passport stamps that you have been living in Cambodia. The question they could have is are you two in genuine relationship.  So if he's on the lease, definitely include that. And anything else showing the connection from you to him not just from you to Cambodia.

And they will want to know how you met, so anything proving that it was in a wholesome setting would be good.

My girlfriend and I were in a similar situation  -- I had spent months/years on and off in Cambodia before I petitioned for her. I included my passport stamps and visas and mentioned in my cover letter something like "I have visited Cambodia 22 times since I met her four years ago for a total of 371 days" or something like that.

We included not a single chat message between us in what we submitted to the embassy.  I did, however, change my Facebook settings after filing the petition so that it sent me an email everytime she started a chat with me. Before we went to the interview I sorted my email inbox for emails from Facebook mentioning her name and printed off screenshots of my email inbox showing more or less a daily email of "B has sent you a FB message."

You want to be there in person for his interview at the embassy. Cambodians who go by themselves are much more likely to be eaten alive by the embassy staff.

Cambodia doesn’t allow same-sex marriage. Taiwan does but they will not marry someone unless it’s legal for that person in their own country (legal for me, not legal for my fiancé).

The other countries that allow it are either prohibitively expensive to travel to or nearly impossible for him to get a visa to. K1 is our only feasible option.

Thailand allow same sex marriage , by bus or plane is cheap and get marry in Thailand. File spousal visa :D
