US petitioner here. I'm SURE this has been brought up before but I couldn't find any threads specifically about this. We are at the I-864 submission step and I want to submit my last three tax return copies. I haven't filed my 2019 taxes yet (who has?). Should (or can) I submit 2016/17/18 or should I wait until I file 2019 and use 2017-19? In terms of meeting income requirements, the 2019 tax return will show with the most gross income but all three recent returns are enough to meet the 125% poverty line thing. If you need any other info, please let me know. Thanks!

Then I don't see any reason to wait.  However, it is your "current income" that qualifies you.  Current income only come from a tax return if you are self employed.

We personally didnt wait and sent the previous 3 years. 2011,2010,2009. We were married 2012 and interview was 2013. I wasnt even asked for any updated taxes even though my interview was June 3 and AOS was submitted in April.  But I submitted 6 months of paystubs which showed hubs yearly salary and my husband's extension letter for 2012 taxes.

But if you are already making 3x or more the required minimum and still at the same job, I wouldn't worry. If they do ask for 2019 tax return just write a affidavit that you have yet to receive all required forms (W2, 1099-DIV etc) for filing your 1040 but will do so before the deadline. Attach the 2019 last 2 or 3 paystubs that should be appropriate if needed for NVC to get DQ.
