You last question is of little consequence right now. Keep focused on the big picture.  Right now you need to focus on quickly getting a copy of the RFE. You need to thoroughly and promptly provide USCIS with the necessary information to satisfy the RFE within the allotted time frame..:yes:

The site says they’ve received my response to the RFE ‘September 23rd’ (although I didn’t receive or send anything)
 

I checked on novemeber 26th and the i485 status back then was ‘case ready to be scheduled for an interview’? That’s why I’m confused.
 

And will fill out my timeline :).

I would recommend that you call USCIS to resolve this and find out what is going on.  It may take a lot of time to call and get through to a real person, but RFEs have fairly short deadlines for response, typically three months or less, so time is of the essence.  When you get through to a real person, confirm your mailing address in their system, as the RFE may have been sent to an old incorrect address.  Good luck!
