Bread Pudding

 

3 double batches

 

2 cups granulated sugar

5 large beaten eggs

2 cups milk

2 teaspoons pure vanilla extract

3 cups of cubed bread, in the US Italian seems to work best, I let it go stale for a couple of days. You do not want it to be too stale.

I cup of brown sugar

1/2 stick of soft butter I would often add more.

Pecans, I did not measure them but added to make a presence. Most expensive bit and you do not want to add too many but enough that hopefully you have one in each spoonful.

 

 Sauce

1 cup of granulated sugar

1 stick of soft butter I would often add more.

I beaten egg

2 teaspoons pure vanilla extract

1/4 cup of Brandy ish.

 

Now I used small pans and grease proof paper for easy release, each one made 2 large portions.

 

375f for about 50 minutes,  but that is high altitude. Give it half an hour or so and check, you want it brown but not burnt on top. Consistency underneath should be doughy but self supporting.

So basically mix everything together and then let it all soak except the sugar which you add to the top.

 

I prefer it hot but if you make a lot you can refrigerate, wrap portions and then zap and add the sauce or ice cream or preferably both.

THANK YOU! (And derp, I said apple crumble but I meant bread pudding -- it's been one of those days.) Pecans are an interesting choice and I think they sound like a lovely addition! You don't have raisins/sultanas, which I might assume would be there. I may try over Christmas, given that I will have some time. I also have plenty of excellent brandy at home at the moment. :D

It is Americanized, the Brandy can be the cheapest passable available, makes no noticeable difference.

We currently have a bottle of Argonaut Fat Thumb open -- it is very nice stuff. Maybe wasted on cooking, good point.

You know I was looking for something different to bake for Christmas dinner and I may make this as I have almost everything already. Thanks for posting and I have some nice recipes I can toss in if wanted.

Have you made your Christmas Pudding? Might be a bit late for a proper one but you could get by.

Haven't even planned on making one and am looking for something different so the recipe looked promising. Right now I am considering pecan pie, chocolate or lemon cake but maybe also pumpkin pie.Already was told I will be making Gumbo and we are getting a duck instead of turkey this year. I want a kickarse dessert.

I am a little ashamed to admit it but I bought mine this year. With the move, I've already packed up a lot of my kitchen things. Also, it's just him and me this year, no family, so it didn't seem worth it to make something myself. I bought this:

Ginger Wine would not be an obvious ingredient to me, but I am not going to argue with Delia.

Barley wine, not ginger wine. And I agree it is not good to argue with Delia! The only useful thing I ever got from my former MIL was the three book set of Delia's How to Cook. They are still in heavy use at my home, and I have gotten very used to making the measurement/temperature conversions, and coming up with decent substitutions for ingredients that aren't available. Also, I regularly shop with British Corner Shop (where I got my suet, and the pudding) to get flours I need. I always forget the demerara sugar for some reason. :( I just got used to cooking all this English food for Voldy who preferred it, especially at Christmas.

I was thinking Barley and typing Ginger, duh.

 

Suet was another of those things, I have found it, I think in Mexican stores but why is it not is US supermarkets?

Can find it at Asian market too but any store that has their own meat dept. will sell suet and most Americanized market more healthy options are available that are more popular.
