I hope this joint sponsor is a relative. I see Ghana getting very strict with who you know and how you know them. That's why they have been requesting a notarized affidavit from them stating how they plan to support you and why they are willing to support you. So I would get ahead of the game and get that from them also and submit.
I know from a Ghanaian point of view $2000 a month seems alot. But in many cities that's rent a month fro a family of 3 and 4. She is barely meeting the income guidelines which is the POVERTY guidelines which means by US standards she is poor and can not support her family.

All you can do is submit new joint sponsor and hope for the best. I know a couple of people going through Ghana and had to submit numerous joint sponsors. Took over 18 months for one and 2 years for the other. So make sure it's ship shape and you have everything they need. And it doesn't hurt that your wife betters her situation also.

Well it took 1year 3months  for them to come to conclusion but hey everyone case is different @Lady Ron
