Yes, extremely fast given your USCIS office is Phoenix, AZ.  Phoenix has an incredible backlog and the usual wait time is anywhere from 9.5 to 15.5 months.  Maybe, USCIS is changing and becoming more efficient.  Congratulations!

Just had my biometrics appointment this morning. Excited to see when I'll be scheduled for my interview Estimated processing time is as of right now May 2020 so we'll see!

The interview is typically one on one.  So your spouse can come and wait in the waiting area but most of the time they are not allowed to the interview.

If you apply under the 3 year rule (can’t see your timeline on my phone) then the spouse also have to attend

This surprises me because I was under the impression (I think I read it somewhere) that the spouse (sponsor) had to be present to demonstrate proof of life (probationem vitae) if one is applying for citizenship under the marriage to an American citizen rules.  This is unrelated but when I sponsored my spouse to get her European citizenship (Italy) I had to be present but she had to answer the questions.  Maybe some applicants who already have gone through the process can weigh in on this subject.

You are not required to accompany your spouse' naturalization interview and will not be allowed into the interview room unless the interviewing officer specifically expresses so.
