Hoping to File I-485 F2B category with approved I-130

Long story short, my mother is an LPR who filed I-130 for me(DOB: Feb 14, 1995) as child <21 yr in August 7, 2015. The petition was approved on 12/10/2015. However, due to USCIS switching to Final Action Date instead of Date for Filing, I aged out and was told that I would have to apply under F2B category. I recently noticed that the visa bulletin is moving twice as fast as usual(sometimes they wouldn't move at all you know), so my mom and I have started collecting documents i.e. tax returns, birth certificate translated to English, old passport, all my I-20,  I-864, I-797C approval notice of my I-130, etc. And about me...

- Have been in the US for 10 years (F2 in middle, high school, then changed to F1 after a random administrative process).

- Filed Tax in time whenever I worked (legally, of course. It was on campus job). Classified as a resident alien for tax purpose.

-  No criminal background. No record of overstay.

-  Bachelor's in Chem.E, currently doing master's .

- Currently living with my mother as a grad student, and she is a full-time employed(makes $28K/yr). I am also a full time grad student, expecting to graduate next December, and receive 18K stipend/year.

- Have US citizen sister who makes about $67K/year in a different state.

I am not really concerned about legitimacy of my case because my case is probably one of the most straightforward, no frill  cases. However, I want to be extra-prepared becasue I know that interviews are required for F2B applicants. So my questions:

- What kind of questions will the interviewers ask me?

- How long does it take to do biometric, get interview and receive approval or denial? I live in Durham, NC by the way, and from what I see, Raleigh-Durham Office is very chill and efficient in general.

- Will my mom's not-so-great income impose any difficulties? Should I ask my sister to be a joint sponsor?

Thanks!
