K1 Joint Sponsor Clarification - Which forms?

Our I-129F was recently approved and our file has been received by the U.S. embassy in my fiance's country. I was living abroad for the last year and am currently looking for jobs in the U.S., so I won't be able to sponsor my fiance alone. Fortunately, my mom, who makes very good money and has a lot saved up, offered to co-sponsor for us. Just for clarification, do each of us fill out separate I-134 Affidavit of Support forms? Even though I don't yet have an income (I have some money saved from my last job), do I still fill out an Affidavit of Support? My mom is in the process of gathering tax returns, bank statements, etc. Do I need to send the original copies of these materials to my fiance or are scans ok?

You both need to fill out separate I-134s, and you both need to provide all of the supporting documents (tax transcripts, etc).  Copies are fine.  If you plan to have your mom also be the joint sponsor for the AOS I-864, then you both need to do that form as well.

Thank you for that. While you're here--My fiance and I never received NOA2 in the mail from USCIS (and the online tracker was never updated). However, we received the NVC Letter and the case has been received by the embassy (which I assume means that I-129F was approved). I am pretty worried about NOA2 "expiring" just because we have no clue when it came. I'm not sure how to get through to anyone at USCIS about this. The Embassy has not yet contacted my fiance about scheduling the interview. What would you recommend? Not having NOA2 physically is stressing us.

Which embassy?  If you fill out your timeline, you will get more specific help.

Have you tried calling USCIS, and escalating to a tier 2 rep?  That would be the first thing to try.  Btw, the paper copy of the NOA2 would have been sent to the USC's mailing address on file.  Have you moved?

U.S. Embassy in Rio de Janeiro, Brazil (RDJ).

I've moved back home from abroad but I always listed my home address (in Iowa) as my mailing address. NOA1 was sent to my mailing address in Iowa.

How do I escalate to tier 2 rep?

I would simply state that you have a matter which needs attention by a tier 2.  Be assertive about it.  Calling earlier in the day is good.

Thank you. I'll try that today. Do you think it's problematic that we haven't received NOA2 by mail? The Embassy hasn't contacted my fiance about scheduling the interview yet.

It isn't necessarily problematic.  Btw, you may want to post on the region-specific forum.  I don't know how it is done in Rio, but for example at our consulate (Auckland), packet 3 was emailed to myself, the USC, and I had to forward it to my fiancé so that he could follow the instructions for packet 4 and the interview, etc.
