ANY income you make anywhere in the world needs to be reported on a tax return with an exception being is as a dependent you earned LESS then 12k. If you earned more then that you were required to file. You are expected to file late returns. You will need a copy of the return (even if it was late filed)if a return was required to be filed,  in order to proceed with immigration. 

How would I file for taxes if I have never received anything from my previous employer? I have nothing to show? No forms or anything.

No contract? No pay stubs? No bank deposits? Those would be your evidence. That said, you are not required to submit evidence of the foreign income with the return...just retain the evidence in event of an audit.

Need to marry and file CR1

Casablanca will not accept joint sponsor for a K1

and you need to be married to live together in Morocco

really!!!!

it is against the law in that country to sleep with an unmarried woman

 You need to know the laws of the country you live in and breaking them (as you 2 have done) does not put you in favor of getting a K1 visa
