What direction should I go?

Been out of the loop for a little bit with the whole immigration thing, and got approached by a mate the other day asking for advice, since we did the process successfully. But of course their situation was different from ours so hoping they could get some inputs from this forum. Current situation is that they meet about 2 years ago while she was (and still is) on a student visa. She is now in the process of getting another visa (where she can work too). But they recently got engaged, and plan on getting married in December back in her home country (South Africa-SA).

So they were wondering if they should just do a wedding ceremony (no papers) back in SA and apply for a K-1 visa and get married when they return from SA.

or

Apply for DCF in SA while they are over there for their 3 to 5 week holiday.

or

Apply for the greencard once they get back.

I wouldn't imagine they would have to get the K-1 visa, since she already will have a work visa valid here, and since they are getting married in SA. I would think they either should do DCF (if it can be done that quick in SA, I know some countries have a really quick turnaround) or just apply for an AOS once they are back here. They won't make her leave or anything like that would they.

Any thoughts or recommendations I can pass on.
