So I'm trying to apply for the K1 visa and I am currently in the process of filling out the I-129f petition. One problem that I have i that I am currently still searching for a job (I recently finished my undergrad so I'm still in those dreaded beginning stages of starting up your career). I understand that you must be making at least 100% of the poverty level for 2 people which is like $16,000 or something like that. I also know that you are allowed to get a joint sponsor if you can't provide proof of that amount right now. So is it possible that I can still have my application accepted even if I don't have a job at the moment, but plan to have one soon after my fiancee gets to the US? I feel like all of my other requirements are pretty strong such as the letters of intent, circumstances/proof of meeting, etc. but I'm thinking that the fact that I don't have a job right now may potentially be the cause of our application being denied should they decide to be strict in that regard. Would a joint sponsor be able to work even if I have no job at all?

You don’t submit income till later, but it also matters what your income was last tax year.  You may need another sponsor but if you get a job before the NVC stage, you may be okay.  A friend did that... started before having a job but had the income by the time the I-134 was due.

They look at the total financial picture. Having graduated college they look favorable on that because you have a means to which to have an income. Second, if you have a job by the time you reach the interview and it's somewhere north of 6 figures, then no problem. If you are near or close to the poverty line then yes you should consider a sponsor.

Since you're just starting the process, it could realistically be a year before your fiancé arrives.  Why would it take that long to find a job?  Unemployment is at a record low.

Just to clarify things a bit

You fill out a petition (the I-129F) that lets your fiancé(e) apply for K-1 visa.

If someone applying for a K-1 visa didn't have a job, it wouldn't matter, because K-1 fiancé(e)s can't work right away anyway; their US citizen fiancé(e) is supposed to be able to support them.
