Do the signatures that need to be on the documents such as the letter of intent, proof of meeting in person, etc. both need to have ink signatures on them, or can I sign the documents with ink and then scan or fax them to my fiance and then she signs with ink? Can one of them be digital while the other be in ink? Reason I ask is because my fiance and I are so far apart, and it would be very difficult for both of us to put a handwritten inked signature on our documents without both of being together in person or without having to ship the documents to her, and that would take a long time because the mailing system is not the best where she lives. So does anyone know if that's acceptable?

They should be wet signatures, but scanning and printing them after is fine. So no issue with your plan.

As Geowrian stated no issue with a scanned signature.   Only her Letter Of Intent to marry needs your fiancee's signature.  You are planning to have separate letters of intent to marry ...

Oh, okay thank you! Yes, I am planning to have two letters of intent to marry, but I heard somewhere that it would probably be a good idea to have both me and my fiancee sign all of the documents that are needed. But I guess that is just optional. Thanks again!

Read the instructions,  nowhere is this mentioned.   Read the signature block on tbe petition.   It says you are signing under perjury that everything you answered and submitted is accurate.   That is enough to give them the recourse they need.

YMMV

The I-129F is a petition.    Now were in the instructions for the I-129F does it request the beneficiary to sign anything except the Letter of Intent to marry.   Follow the instructions for the form ..

YOU, the USC are petitioning the U.S. government for authorization for your fiancee to apply for the K-1 visa.    Having her sign the petition or any other documents  sound like a Forrest Gump moment ...
