My income exceeds the 125 poverty guidelines by 8,000 dollars for last year but didn’t exceed the guidelines for the two years prior to that. We recently filed for adjustment of status but wanted to make sure the income level was nothing to worry about.

As long as your current annual income meet the requirements now you're fine.  I understand though, for example, because for my 2015 taxes,   it shows I only got paid about $200 for AGI, but I was receiving combat pay which is nontaxable, so I had to explain why it was so low.

I just realized I forgot to include proof of current employment in the paperwork, is this a big deal if I call them on Tuesday and notify them of it and send them that information?

How long did this delay your visa application? I just mailed my K1 application and most of my income will be reduced because of an uninsured loss. so I expect I will have to also explain my situation.

It didnt delay my application at all.  USCIS accepted it.  If your income still meets the requirement, even with a financial loss you will be fine.  They will not ask that until you do the I-134 for your fiance's interview.  Do have your documents ready for it.

If you provided recent pay stubs, or anything similar showing you're receiving income from your employer, you should be fine.  Is there any way you can get an employment letter from your job?  I submitted a document called a "statement of service"  basically stating I am currently active duty.

My situation is similar to Jeff and Nadine's. I was retired by my company in 2015, received a decent severance check and at my age then, 63, no new positions in sight. Though I have solid savings, and some rentals, my income was below 125% poverty level in 2016 and 2017. In 2017 I started receiving Social security income but it is not counted on the 2017 "total income" line. In 2018 I was about $7000 over the 125% level. So I am thinking about delaying my NVC docs until 2020 when I will be about $8000 over the 125% level on my 2019 tax. Would it make any difference? My real total income in 2017 was nearly double the 125% but the tax form "total income" does not show SS income.
