My wife (the petitioner) makes $55k. Her total income on 2018 tax return was $48k.

But in 2017 she made $200 and before then $7000.

Does the income history negatively affect the current steady income she has?

Thanks!

Yup! I was in a similar situation when sponsoring my husband earlier this year. In 2018 I made more than enough to sponsor my husband. We applied in April 2019 and I was well on my way to making enough for 2019 as well.

In 2016 and 2017 I was a student working part time and didn't make enough to be at 125% of the federal poverty level for our household size. I submitted my tax info for the last 3 years in the 864 anyway. My husband's AOS was processed without any issues.
