When we went to the SSA to apply for the number, we used only his first last name on the application. We were told that we had to use both because both last names were on his visa.

Francisco arrives through Miami 05/01/2007

MARRIED! 05/11/2007

AOS/EAD received in Chicago 06/15/2007

NOA1 for AOS/EAD 06/20/2007

RFE 07/14/2007

RFE received and case processing resumed 07/20/2007

Biometrics 07/23/2007

AOS transfer to CSC 08/10/2007

AOS pending at CSC 08/16/2007

EAD approved 08/25/2007

EAD received 09/04/2007

For those of you who have not yet gotten your marriage license / certificate, your SO can use that method to change his or her name. My hubby changed his when we got married, and dropped the last (maternal) surname. His EAD, AP, and new PR card came in the mail with his new name. He was able to change his SS card with his new EAD card (even though his visa and passport have other names) and then change his DL. Like Meowmix, we too had to persist and get a little ornery with the marriage license folks (I made a separate trip and asked to speak with a supervisor) but in the end it all worked out.
