Just never trust the actual USCIS website too much as it tends to leave out some things, like with the I-129F it didn't state a lot of the supporting documents that were needed in the end result package

Really?  When assembling your petition, did you actually refer to the 'optional checklist' from the USCIS website?  Because it is pretty darn clear about supporting documents.....

When in doubt, defer to the USCIS form instructions rather than VJ guides.......

Yeah definately using each application forms instructions, required documents, and special instructions, you all been amazing so far, amazing to have people that can help and point in the right direction, and help.

We are plowing through it, currently gathering up all the required documents in correspondence to the form instructions

What exactly is meant by "into the body of each"  doing that is amazing, and we will definately do it, just not sure what/where is meant by the body of each.

Also no criminal records here.

The body of your cover letter (it is a formal letter).

The written part.

In between the greeting and introduction and before closing and signature.

The middle, where you will explain what you are filing and who its for and then outline what the form packet contains.

I see also that you have 8 passport style photos there, from what we have seen isn't it just 6x passport style photos for the entire packet, 6x of the beneficiary?  I just went through all the required documents for all the forms and I couldn't find anything of the sponsor or such needing 2x passport style photos, am I missing something?  If so would love the help.

I included 2 passport photos of myself along with the 6 of the beneficiary. Just in case type thing. They probably threw them out for all I know, but I think I read somewhere it was recommended, so since I had dozens of extra photos, I threw a few in. My AOS interview is next week, so everything went well with my package, no RFE or anything. And interview in only 7 months when USCIS estimate is 14-16 currently. Maybe it was such a pretty package they moved it to the top of the pile... LOL. Doubtful, but I'll take it.

Photo of the USC is not required as the USC is not the applicant.   These applications are all about the alien

YMMV

I864 is NOT an application but evidence submitted to support the i485 application.   I have read the instructions to the i864 many times.  Photo not required.

YMMV

In the Sept AOS filers thread someone made a point that it might be good to file a marriage certificate for each the I-485, I-131, and I-765, and giving a cover letter for each itself aswell.  I see this could be a good idea, but is it needed?  Nothing is stated about this on the checklist on VJ here.

as overwhleming as it seems it is, yes.

I've submitted only 1 certified copy of our marriage license. Why on earth would I want to send it 3 times in one envelope? I've followed the USCIS check list and it doesn't say anything about 3 copies. It's just waste of paper, ink and confusion on the USCIS employee end.

Filed my papers in May, so far got EAD card in hand, and waiting for interview at the local office. Along the way didn't get single RFE.

Because the 3 forms and their supporting documentation are separated for processing.   Sounds like you got lucky with a clerk who used the photocopier. Certainly the exception rather than the rule.
