I saw another post where 6 months of paystubs was well more than sufficient, by time of interview I would have about a year of paystubs I will be showcasing, employment letter,  a full bank statement with her on it, and other things with both our names on it such as same address

If you have 6 months to submit with the I485 then youre good to use current employment income.

If not then you wouldnt be able to as your I864 would be reviewed and have to be preapproved before you even had a chance to be scheduled for an interview. Your I864 income would have to be found viable during the NBC review before it would be found "ready to schedule".

If not viable a joint sponsor would be requested via RFE and would need to be satisfied before being sent to your LFO to wait.

The I864 instructions state 6 months are the recommendation.

I'd follow that.

Why send 26 pieces of paper when one will do. Quality not quantity

YMMV
