My question is Can a petitioner update his current income after documents to NVC have been submitted? I was student and hence unemployed when I submitted his documents.( I petitioned fro my father).  Now I have got a job. Can I send my employment letter now or is it better to bring it to interview?.

Once you are document qualified its best to wait

It's when NVC says the file is marked "complete " and ready to schedule interview

That all required required documents  been received and accepted by the NVC and that it is ready to be sent to the Consulate for  the interview stage   It is also known as Case Complete
