Timeline

I've already sent off my AOS package, but my husband and I were looking over the forms and realized we've clicked "Yes" on item #23.a, "have you filed a Federal income tax return for each of the three most recent tax years" when it should be "No" since my husband didn't file a return for 2016 as his income was too low -- we sent in a signed statement regarding this fact as well. Is this something we'll have to wait to fix via RFE or in the interview? I hope it doesn't risk the whole affidavit.

You should be fine.   Current not historical income is the most important

It may turn out to be nothing.

 

One thing that you could do, and it would likely carry more weight than your sworn statement about non-filing, is to get a "Verification of Non-Filing Letter" from the IRS. It is just a different type of transcript available from IRS, https://www.irs.gov/individuals/tax-return-transcript-types-and-ways-to-order-them . You may not need it, but being prepared and getting a IRS-supplied transcript may be helpful.
