When looking into where/how to send our application it says on the USCIS website all outside applications to be sent to Texas but when looking at other Kiwi profiles on VisaJourney i'm seeing other centres. How do you know which service centre to send your application to? I'm so overwhelmed with the process..thanks in advance.

You submit it to the Dallas lock box. USCIS sends it to the service centre. You don’t get to select a service centre or send the petition directly there. You can’t do direct filing in NZ as there is no international office .. and I don’t see that you are covered by exceptional circumstances.

Always follow the official USCIS instructions.........

In summary, it took 13 months for approval of the CR-1.  It took 44 months for approval of the I-751.  It took 4 months for approval of the N-400.   It took 172 days from N-400 application to Oath Ceremony.   It took 6 weeks for Passport, then 7 additional weeks for return of wife's Naturalization Certificate..
