How many NOAs/correspondence will be sent by USCIS there during the AOS? I understand it may vary with RFEs but how many without?

There are usually 4 NOAs; 1st is the Received notice, 2nd is a Biometrics notice, 3rd would be an Interview notice and 4th would would be the Approved notice that the green card is in production.

RFEs are different.

The NOAs are sent by mail or email? It seems unwise to move if by mail...

By mail, same for RFE.

Your timeline is blank, you received your petition approval already and are starting the process at the embassy, correct?     You have plenty of time to move before you are at the AOS phase.

The total amount may vary based on RFEs, and the need or not for an interview. But it should be NOA of receipt, Biometrics appointment, EAD, interview if there's one, final decision and consequent Green Card.. that's without RFEs in 4-5 pieces of mail that will need to be sent to the person adjusting.

If you already have your receipt number, go ahead. If you're waiting for NOA1, trying to change address will be a WORLD of headaches, I can say from experience.
