Super question: we sent our I-751 package to Dallas, Texas today as it was indicated on the USCIS website (we live in New York), but I see that everybody has sent to Vermont or California. Did we make a mistake?!! Please help... I'm panicking!

No you sent it to the right place.

There are only 2 places to sent I-751 and that is Texas or Arizona depending on your state.

What you see is the service centers. They will send your case out to a service center.

Thank you very much, Georgia16! I was almost kicking myself. We had some issues when we did the adjustment of status, that I feel very apprehensive with this thing since then. I hope our case goes smoothly this time.

Again, thank you very much for replying.

In summary, it took 13 months for approval of the CR-1.  It took 44 months for approval of the I-751.  It took 4 months for approval of the N-400.   It took 172 days from N-400 application to Oath Ceremony.   It took 6 weeks for Passport, then 7 additional weeks for return of wife's Naturalization Certificate..

It will be fine. ROC is very backlogged so lean back and be ready for a LONG journey and don't panic when you don't hear anything after the extension letter. As you can see I'm almost 8 months in and heard nothing which is quite normal. Don't compare yourself to other especially Spouse visas as they go through another process which might be faster depending on their local service center.
